Spice Cake (12 servings) 2 cups all-purpose flour 1 1/2 tsp baking powder 1/2 tsp baking soda 1 tsp ground cinnamon 1/4 tsp ground nutmeg 1/4 tsp ground cloves 1/4 tsp ground ginger 1/4 cup butter, softened 1/4 cup shortening 1 1/2 cups sugar 1/2 tsp vanilla 2 eggs 1 1/4 cups buttermilk Preheat oven to 350 deg F. Grease a 13x9 inch baking pan, set aside. Stir together flour, baking powder, cinnamon, nutmeg, cloves, and ginger. In a large mixing bowl, beat butter and shortening together with an electric mixer on med. speed for 30 seconds. Add sugar and vanilla, beat until well mixed. Add eggs, beating after each. Add dry ingredients and buttermilk alternately, beating after each addition. Pour into pan. Bake for 35 to 40 minutes (likely more), until a wodden toothpick comes out clean from near the center. Let cool. A verry very very good cake.
