Mead recipe (taken from the rialto)

Take 1 part honey to two parts water.
Boil "till the skum risith no more".
Add citric acid in the form of lemon, orange or lime juice 
   (lemon being easiest) at about 1/2 cup per gallon.
Let cool to nearly room temp.
Add yeast, real wine yeast only please. I prefer Montrachet.
Rack every month or so till clear.
Bottle after it is totally clear (bout 3 to 5 months).
Let sit at least one year from boiling.
